Our Spicy Rum begins with our fragrant Gold Rum. We add mulling spices, nutmeg, blade mace, three types of cloves, allspice and cassia cinnamon. Once this rum has become beautifully spiced, we then add smoked serrano and jalapeno chili peppers grown right here on the farm to finish it off into a spicy rum. The last 24 hours we put a trace of hibiscus in to lightly shade the color of the rum to match the amazing fall sunsets on Rainbow River.
Our bold Black Rum begins with our fragrant Gold Rum. We make a homemade butterscotch sauce using Florida sourced brown sugar, butter and water. Then, we add a small amount of the original molasses used to make the rum. We then take locally grown and harvested blueberries and blackberries, as well as hibiscus, and macerate them in high strength silver rum to make a very dark rum dye which is added in. The final ingredient is the Venetian Lily. This produces a distinctive raspberry like aroma and flavor. The rum macerates until it deepens in color and then we filter the solids out to produce the finest sweet Black Rum, a toast to the dedicated Rum Runners that came through Ybor City in Tampa during prohibition.
